In December 2025, The Mount Nelson Lodge, Cape City’s beloved “Pink Woman,” is ready to introduce Amura by Ángel León, bringing the celebrated Spanish chef’s marine-driven delicacies to Africa for the primary time.

Amura is greater than a restaurant, it’s a sensory voyage. It channels the rhythms of the ocean and the biodiversity of the Cape shoreline, combining Chef León’s experimental strategies with indigenous South African produce. Recognized for pushing boundaries by introducing sea rice, phytoplankton, and sometimes ignored species to haute delicacies, León brings a philosophy of respect for marine life, sustainability, and culinary innovation.
Based on stories by BizCommunity, León describes his partnership with Mount Nelson as a gathering of aligned visions: “Rooted in heritage and guided by respect for nature … to honour the ocean, have fun heritage and hospitality with soul.” Patrick Fisher, the resort’s common supervisor, frames Amura as “a love letter to the ocean,” transferring León’s artistic spirit from Cádiz to the Cape.
Inside architect Tristan du Plessis has envisioned Amura’s areas as cinematic underwater realms drawing on the imagery of kelp forests to move visitors into an immersive marine atmosphere. he kitchen will provide each à la carte and tasting menus, with dishes drawn from native seas and lands: wild herbs, kelp, fire-cooked preparations, coastal fermentations, and underutilised fish species are anticipated to be culinary highlights.
